Coffee and Vanilla Mousse

Ingredients

Portions: 10 2 tsp coffee granules dissolved in 30g hot water half tsp vanilla essence 100g castor sugar 250g double cream, whipped vanilla pod to decorate 550g CreaVite Fraiche

Preparation method

Heat CréaVite Fraîche to 85°C. Allow to cool but not set. Mix the CréaVite Fraîche, coffee, vanilla essence and sugar together. Fold into the whipped cream. Divide between the moulds. Chill to set. De-mould and decorate with vanilla pod. Chef’s tip: Add 50g Baileys for that extra touch of luxury Supplied by: CréaVite
