Ingredients
Ingredients 6 nos. Chicken Supreme 2 tsp Yoghurt 1 tsp Coconut Mixture (see below for how to make this) 1 tbsp Thick Coconut Milk Pinch of Cardamom Powder Salt to taste For Coconut mixture 2 tbsp Grated Coconut ½ tsp Mustard ½ tsp Cumin 1 no Green Chilli
Preparation method
Method: Grind the coconut, mustard, cumin, green chilli to a fine mixture. In a bowl combine yoghurt, coconut mixture, coconut milk, cardamom powder and salt. Marinate the chicken supreme with the mixture at least for 2-hours. Remove the chicken supreme from the marinade and grill. Put the remaining marinade in a pan and cook over a high flame to reduce. Place the grilled chicken in the pan and toss so that it is evenly coated with the mixture. Serve hot with salad
