Ingredients

Ingredients: 175g self-raising flour ½ tsp baking powder 175g butter, softened 115g Fruisana Fruit Sugar 3 medium eggs 75g desiccated coconut

Preparation method

Method: 1. Sieve the flour and baking powder into a bowl and add the remaining ingredients. Beat with a wooden spoon for 2 -3 minutes until blended and well mixed. 2. Spoon the mixture into greased and lined deep 18cm (7 inch) round cake tin. 3. Bake in the oven: electric 180ºC, fan 160ºC, gas mark 4 for 1-1¼ hours, until well risen and golden. Leave in the tin for 5 minutes before turning out onto a cooling rack. 4. When cold, store in an airtight tin. Supplied by Fruisana www.fruisana.co.uk
