Preparation Time: 15-20 minutes Cooking Time: 25 minutes per 500g Serves: 8-10 Ingredients: 1 whole boned and rolled leg or shoulder of pork with the rind on 2 tablespoons oil 6 small red apples ½ cup Demerara sugar Apple sauce: 6 green apples, peeled, cored and quartered ½ cup caster sugar 1 lemon, zested and juiced 4 cloves
Cooking Instructions: 1. Pre-heat the oven to 220°C for 10 minutes. Rub oil onto the whole surface of the rind. 2. Bake the pork roast in the pre-heated oven for 20 minutes at 220°C. 3. Reduce the temperature to 180°C for the remainder of the cooking time. 4. Peel the red apples in a spiral pattern leaving half the skin intact. Roll the apples in the Demerara sugar and place in a baking dish. Bake in the oven for the final 40 minutes of the pork cooking time. 5. While the pork is roasting, place the apples, caster sugar, lemon rind and juice and cloves into a saucepan and simmer, stirring occasionally until the apples are pulpy for approximately 12 minutes. Allow to cool prior to serving. 6. Allow the roast pork to rest for 10 minutes prior to slicing and serving. 7. Garnish with baked apples and apple sauce alongside sausage meat stuffing, roast potatoes, roast parsnips, steamed carrots, steamed sprouts and rich gravy. Recipe Courtesy of BPEX
