For more information on Tilda Foodservice please call 01708 717 777 or visit www.tildafoodservice.com Serves 4 Ingredients: 250g Tilda Easy Cook Basmati 1 onion chopped ½ small aubergine chopped 2 cloves garlic crushed 2 tbsps sunflower oil 25g butter ½ tbsp garam masala powder 2 carrots coarsely grated 1 litre vegetable stock 100g baby spinach leaves 50g unsalted cashew nuts toasted Salt and freshly ground black pepper

Preparation method

Method: 1. In a heavy based saucepan gently sauté the onion, aubergine and garlic in the oil and butter for 5 minutes. 2. Stir in the rice and cook for 1 minute then mix in the garam masala. 3. Add the carrot and stock plus some salt and bring to the boil, then cover and simmer for 15 minutes. 4. Gradually stir in spinach until wilted and check seasoning. Serve sprinkled with the cashews.
