Bleiker’s Smoked Salmon Pâté

Ingredients 255g (9 oz) Bleiker’s Traditional Oak Smoked Scottish Salmon 110g (4 oz) cream cheese 2 tbsp double cream 1/2 lemon, juice only 2 tbsp chopped chives (plus some extra to sprinkle over the top) pinch of sugar freshly ground pepper

Preparation method

Method Put all the ingredients into a blender and pulse until it has the desired consistency. Plenty of pepper is good but try not to have any salt, as the smoked salmon will be salty already. Occasionally you could substitute the lemon and chives for lime and coriander. Tip For serving as a starter with salad and oatcakes or Melba toast slightly rough pate works best but for canapés you may prefer a smoother version.
