Blackberry and Almond Muffins

Ingredients

Makes 12 250g self-raising flour 1 tsp baking powder 115g Fruisana Fruit Sugar 80g butter, melted 2 large eggs 200ml milk 1 tsp almond essence 200g blackberries 25g flaked almonds

Preparation method

1. Place the flour, baking powder and Fruisana into a bowl. 2. In a different bowl, mix together the butter, eggs, milk and essence. Stir into the flour mixture and mix well. 3. Stir in the blackberries gently to avoid breaking them. 4. Pour the mixture into 12 muffins cases and evenly sprinkle with flaked almonds. 5. Bake in an electric oven 200°C, fan oven 180°C, gas oven mark 6 for 15-20 minutes until well risen and golden. 6. Delicious served warm. Recipe from Fruisana www.fruisana.com
