Beef Saltimbocca

Ingredients

Serves 4 Preparation time: 15 minutes Cooking time: Under 20 minutes Ingredients: · 4 x 150g/5oz Quality Standard beef fillet (tenderloin) · 4 slices Parma ham · 4 slices Mozzarella or Provolone cheese · 6-8 fresh sage leaves · Salt and freshly milled pepper · 4 large Portobello mushrooms, cleaned and prepared · 2 garlic cloves, peeled and crushed · 30ml/2tbsp olive oil · 30ml/2tbsp freshly chopped flat-leaf parsley

Preparation method

Method: 1. Place the steaks on a chopping board on a large square piece of cling film. Place two steaks on half, fold over the cling film and flatten with a rolling pin or meat mallet. Repeat with the remaining steaks 2. Using a sharp knife carefully slit the steak halfway through the thickness lengthways, almost cutting through until it resembles a butterfly shape. Place a slice of Parma ham, cheese and two sage leaves on top on side then sandwich together. 3. Secure with a small wooden skewer or a couple of cocktail sticks, season and cover lightly with a touch of oil before cooking on a prepared barbecue for 8 minutes (for medium), turning once, or as you like your steak. Leave to rest for a few minutes. 4. Meanwhile, drizzle the mushrooms with the olive oil and garlic and cook on the barbecue for 8 minutes.
