Beaufort with Artichoke Hearts

These recipes are from the 11th annual Skills for Chefs conference which took place on 23-24 June at The Octagon Centre, The University of Sheffield. Makes 4 Ingredients ·40g Beaufort cheese ·2 artichoke hearts, cooked and marinated ·¼ tsp English mustard ·chervil sprig

Preparation method

Method Heat the grill. Cut the Beaufort into 4 pieces and halve the artichokes. Place a piece of cheese on each one and melt lightly under the grill. Top with a little mustard and a chervil leaf.
