Bang on Beef Chilli with Long Grain Rice

Ingredients

Ingredients Serves x 4 Preparation time 4 minutes Cooking time 14 minutes Cost per serving £1.70 1 x 500g jar of Uncle Ben’s Chilli con Carne sauce (medium or hot dependent on your preference) 250g x of Uncle Ben’s Long Grain boil in the bag rice 500g x lean minced beef 1 x green pepper (seeds removed & diced) 1 x150g tin of sweet corn drained 1 x tbsp sunflower oil

Preparation method

Method 1. Bring a large pan of water to the boil & heat a large non stick frying pan on the stove top. Add oil to the frying pan & then add the minced beef, breaking it up with a wooden spoon. Cook & colour for 4 minutes. Next add the green pepper & cook for a further minute. 2. Add 250g of Uncle Ben’s Long Grain boil in the bag rice to the pan of boiling water & cook for 10 minutes. 3. Whilst the rice is cooking, open the jar of Uncle Ben’s Chilli con Carne & pour over the minced beef & peppers. Add the drained sweet corn, stir & bring to a gentle simmer & continue to cook for 8 minutes, stirring occasionally. 4. Carefully remove the rice bags from the water & drain. Tear open the bags & serve onto 4 plates. Stir the chilli & spoon onto the plates next to the rice.
