Baked apples and damson jam

Serves 2 Baked Apple Ingredients: 2 cored apple (Cox apples) Sprinkle of ground cinnamon Natural yoghurt Damson Jam Ingredients : 1kg local damsons 1kg sugar 15g butter

Preparation method

Method: For the apples: Heat the oven to 220°C Put apple on baking tray and sprinkle with ground cinnamon. Bake for 10-15 minutes. Take it out of the oven, put on a plate and pour damson jam and natural yoghurt to serve. For the damson jam: Place the damsons in a pan and simmer very gently to extract the juice. Add the sugar and stir over a low heat until the sugar is dissolved. Bring the fruit to the boil and boil quickly until the jam is at setting point. Stir in the butter to remove the scum.
