Aussie-style Prawn & Scallop

Ingredients

500 mls Heinz BBQ Sauce 300 mls Orange Juice 30 x peeled prawns 30 x scallops 20 x cherry tomatoes 20 x pineapple chunks 20 x wedges of red onion 20 x 2cm chunks of green pepper

Preparation method

Soak 20 large wooden skewers in water for 30 minutes to prevent burning. Blend 500 mls Heinz BBQ sauce with 300 mls orange juice until smooth. Take skewers and thread peeled prawns, scallops, cherry tomatoes, pineapple chunks and wedges of red onion, chunks of green pepper and season. Brush each generously with the sauce and BBQ over medium coals or grill for 6-10 minutes, turning occasionally. Serves 10 Recipe by: Gary Barnshaw, head development chef, Heinz Foodservice
