Abstract
Funnybones Foodservice has launched two new products made from blue corn (also known as purple corn) – blue corn tortillas and organic blue corn chips.
Grown in the US’s south-west, and Central and South America, blue corn is essentially the same species as white and yellow corn, but contains less starch, has 20% more protein and has a lower glycaemic index than white.
Tom Styman-Heighton, development chef at Funnybones Foodservice, says: “We have not introduced these new products simply because they are fashionable and good for you, but also because they are truly delicious. The blue tortillas give an exotic look to a wrap or cooked dish such as burritos.”
