Based in northern Spain, the small distributor got its inspiration for the sauces from centuries old recipe used by the region’s fishermen during their voyages in search of cod in the deep waters surrounding Iceland and Greenland.
The sauce comes in 120g bottles in two flavours: red or green.
The green sauce has a fresh, slightly sharp aroma with a fruit flavour, which leaves a touch of spice and a lingering, moderately hot finish. It is suited to accompany fish, seafood or vegetarian dishes.
Alternatively, the red sauce has a full-rounded flavour with notes of ripe tomato an a late arriving head which lingers in the mouth. It is perfect used as a condiment with grilled meats or to add some spice to marinades or dips.
Monika Linton, Chairman and product director, said: “Traditionally, Cantabrian fisherman were travelling thousands of miles with very basic equipment and boats by modern standards. Their essential cargo is a fine example of how recipes are developed to serve very specific requirements. Making the sauce was something of a ritual for the sailors but sadly fell out of use over time.
“It is wonderful that a local producer has chosen to resurrect a recipe that has been responsible for fortifying generations of seafarers.”
