The one day master classes, with chef lecturers from Westminster Kingsway College, are intended for chef professionals and food enthusiasts alike.
The new butchery master classes will explore lamb, pork and beef with chefs learning about the prime cuts of meat, preparation techniques and understanding the provenance and farming of the different types of meat.
The one day butchery master classes will include a step-by-step guide to butchering, demonstrations and hands-on practical work as well as breakfast, lunch and meat to take home on the day. All of the high quality products are from known sources and supported by the college’s top quality meat suppliers.
The lamb butchery master class is sponsored by Welsh lamb and the pork butchery master class is sponsored by BPEX (British Pig Executive).
In addition, the one day game seminars at Westminster Kingsway College is set to continue with two new master classes offered. The game seminar is a specialist master class in the different species of wild game available to chefs in the UK and the various methods of cooking involved. It is sponsored by UK Game, one of the UK’s leading game dealers.
The game seminar brings together examples of all types of game as well as an insight into where game can be found, what they eat and what makes them special for British menus.
