The report sets out the caterer’s ongoing operation commitment to sustainability and CSR and reveals strong sustainability successes throughout 2014/15.
Vacherin Cares highlights the caterer’s three star rating by the Sustainable Restaurant Association, top 10 place in the Sunday Times Best Companies to Work For in the UK list, and its increased recycling pledge by 25% over the past 7 years, to over 75% in 2015.
The group has also reduced overall carbon emissions by 5%, increased locally sourced animal products from British farmers to 90%, and all sites no cook with locally-sourced rapeseed oil which is then turned into biodeisel after use.
Since January 2014, Vacherin has spearheaded the ‘Red Meat Free Mondays’ initiative, with only fish and chicken served in participating Vacherin sites on a Monday. The initiative has reduced Vacherin’s carbon emissions by 65 tonnes.
Anthony Kingsley, Vacherin’s lead for sustainability and CSR, said: “Sustainability and CSR reports are vital tools in encouraging our employees, clients, suppliers and partners in raising the bar on sustainability, and also inspiring the wider hospitality and foodservice industry to be transparent with their own social and environmental impacts.
"The report clearly lays out our commitment and operational dedication for all to see, but the true competitive advantage comes when we can benchmark our progress and show our stakeholders year-on-year improvements, and our Vacherin Cares Report does just that.”
