‘Plant-forward’ approach to catering
Abstract
The University of Reading is implementing a ‘plant-forward’ initiative on its campus as it believes it is more effective than a 100% plant-based alternative.

Across campus, the university aims to make the food on offer as healthy and environmentally friendly as possible.

Matt Tebbit, head of bars and dining at the University of Reading, said: “Plant-forward is all about reducing meat and increasing plants so fruit, vegetable, grains, legumes and the whole concept is that it’s healthier for you. We probably all eat too much meat but it’s not about restricting or removing items.

“For example our burger is blended with 20% oyster mushrooms, which tastes meaty. The burger still tastes great and most customers don’t notice. However, we disclose all our ingredients on all our menus.

“The universities that have gone plant-based only are generally universities that don’t provide meals in a residential setting. From our research and our farms we know that plant forward is a much more sensible approach in terms of getting people onboard.”
