Abstract
UK Food Plan has released vegan recipe ideas that school chefs can use during the #EatThemToDefeatThem campaign to help schoolchildren improve their diet.
‘Award-winning chefs’, Tony Mulgrew and Lyndon McLeod, created the food recipe pack to help schools deliver more vegan and vegetarian dishes.
The meals are full of fruit and vegetables, which contribute towards pupils achieving their five-a-day.
McLeod said: “Increasing the number of vegetarian and vegan options at your school is an easy way to meet the varying needs of your students, whilst saving time and money.”
Some of the vegan recipes include:
- Beetroot burgers with barbeque sauce and sweet potato wedges.
- Chickpea burgers with garlic sauce, pickled red onions, pitta bread and salad.
- Falafel with homemade garlic ketchup, salad and tortillas.
- Ratatouille with bean and parsley cakes.
- Spicy carrot balls with sweet and sour sauce.
The UK Food Plan contains recipes with a list of ingredients and instructions of how school chefs can re-create the dishes for schoolchildren.
