TUCO Competitions will return to the University of Warwick on 7 and 8 April 2020 with new categories designed to reflect the latest food and drink trends.
Mathew White, chairman of TUCO, said: “Every year the event grows as we create new categories and respond to competitor feedback from previous years.
“This renowned competition gives college and university caterers the chance to showcase their skills and talents and provides an amazing opportunity for the industry to come together, inspire others and most importantly learn from one another.”
Last year a new entry fee of £275 for the whole institution was introduced. The fee includes two night’s accommodation with breakfast and dinner for each competitor.
Students entering the Cook and Serve Challenge, a three-person team event, will need to use TUCO’s greenhouse gas footprint calculator this year. This addition highlights TUCO’s commitment to sustainability and it will encourage competitors to look at food miles when creating their three-course lunch.
New for this year is the Innovation Breakfast Challenge that encourages students to create an ‘innovative’ breakfast option. TUCO’s trend report showed breakfast was the most popular meal of the day but consumers want to be able to eat it throughout the day.
The Love British Food Challenge will ask competitors to deliver two portions of a main course using British pork served with suitable garnish and accompaniments.
The Vegan Challenge is another new category this year, which reflects the on-going ‘pant-based revolution’. Students will need to cook two portions of a vegan dish that will appeal to vegans, vegetarians and meat-eaters alike.
Other competition categories include Barista Skills Challenge, Mixology Competition, Chef’s Challenge, Salon Culinaire and Photography Challenge.
