Abstract
Four leading chefs from the Craft Guild of Chefs are gearing up to inspire fine food professionals with dynamic live cooking demonstrations at the Speciality & Fine Food Fair, which takes place from September 8-10 at London’s Olympia.

Craft Guild chairman Christopher Basten and Guild master craftsmen Rob Kennedy, Ben Bartlett and Brian Mellor will each be exploring different areas of cooking at the fair’s Fine Food Forum on Tuesday, September 10.

Hosted by the Craft Guild CEO Martin Bates, the day of demonstrations will start with a look at simple food and flavours 'fit for a queen' with Rob Kennedy, executive chef at the Royal Military Academy at Sandhurst, who regularly cooks for the royal family, dignitaries and world leaders.

Master chef of Great Britain Brian Mellor, who runs Harthill Cookery School in Cheshire and founded the North West Young Chef of the Year competition, will follow with a look at game as a growing popular and healthier option to other meat.

Renowned chef Ben Bartlett, dubbed BBQ Ben after winning the first Britain’s Best BBQ’er competition at the British Barbecue Championships in 2003, will then show his expertise with a fiery barbecue fish masterclass, demonstrating new smoking methods and exploring under-utilised, sustainable British fish.

Rounding up the demos will be Christopher Basten who will give a masterclass in rustling up hassle-free but high impact garnishes from tuiles to crisps for dinner parties.

The running order will be:
The Royal Plate with Rob Kennedy – 11.00-11.45am
Game On with Brian Mellor – 13.30-2.15pm
BBQ Fish Masterclass with Ben Bartlett – 14.45-15.30pm
Garnish to Impress with Christopher Basten – 16.00-16.45pm
