Abstract
Contract caterer Elior UK has enlisted the help of five top UK chefs, including Tom Kerridge and Claire Clark, to mentor its Chef School apprentices ahead of them catering for Elior’s Inspirational Dinner (26 April).

To help the students prepare for the dinner, which will see them serve 150+ guests a four-course meal at Lloyds of London, Elior has teamed up with chefs Ivor Peters, James Goulding, Tom Kerridge, John Williams and Claire Clark, who have each designed one course.

As well as raising money for the company’s charity partner, Heads Together, the event will enable the apprentices to “build their skills and confidence as they look to pursue their dream roles as chefs.”

Working alongside their mentors at their respective hotels and restaurants, Elior also selected four ‘service champions’ from its customer service training programme to be given a masterclass from Fred Sirieix, general manager at Michelin-starred restaurant, Galvin at Windows.

Elior’s food development director, Peter Joyner, said: “Catering for an event of this magnitude is no mean feat, but our apprentices have been putting in the hard graft for months, soaking up everything they can from their chef mentors at some of the finest culinary establishments in the country.

“I have no doubt they’ll rise to the challenge and make the Inspirational Dinner a night to remember.”

As part of her prize for coming third in Springboard’s FutureChef competition (which Elior sponsors), 16-year old Imogen Pickles will also work on the Inspirational Dinner.
