Sodexo and Rational are looking for the best sustainable dish. In the preliminary phase, eight Sodexo chefs qualified for the final having seen off more than 300 applicants from 30 countries. From 11-15th November, they will present their creations to the jury at the final in Paris.
To win the title, the dishes not only have to taste good, but they must be 100% plant-based, made from sustainable ingredients and avoid food waste. Additional points will be awarded for creativity, financial viability, skills and techniques.

- John Oliveira da Conceicao (Brazil)
- Christopher Paredes (Chile)
