The first Master Chefs of Great Britain event of the year was held at the Old Course Resort and Spa in St Andrews with a menu that solely focussed on local Scottish produce.
David Hay, managing director of Compass Scotland, said: “Our apprentices did a wonderful job working with Compass Scotland culinary director, Graham Singer, to produce a delicious lunch focused on a theme we are all incredibly passionate about. Sustainability is key to our future food strategies and our apprentices are key to meeting our commitments.”
Compass Scotland launched its first Modern Apprenticeship Programme earlier this year with a commitment to creating and developing 100 opportunities in its first year.
Jonathan Foot, head of apprenticeships and early careers at Compass Group UK & Ireland, added: “This was a fantastic experience for our apprentices, cooking intricate and flavoursome dishes at a prestigious event, for some of the best chefs in Great Britain.
“Events like these add a special layer to the Apprenticeship programme, and not only did they learn a lot, but they thoroughly enjoyed it – as did the guests!”
