Abstract
The Senior Allergen Advisor (SAA) awards celebrated the first round of graduates to complete the Allergen Accreditation scheme.
Catherine Attfield, Artizian Catering; Steve Woodman, Harbour & Jones; Gary Piper, Artizian Catering; James Bardell, Harbour & Jones; and Arantza Pueyo of the Brewery London all completed the scheme.
Each of the above candidates has taken a food business through the Allergen Accreditation scheme that entails 45 interrogation areas of the journey of food allergens from supply through to service.
Businesses have to demonstrate knowledge of the law, staff training, Food Allergen HACCP, systems and procedures for allergen handling and effective communication systems to customers.
The SAA award recognises the outstanding service to people with allergies and the safe management of food allergens in food service.
