ROUX AT PARLIAMENT SQUARE SET TO OPEN NEXT WEEK

Abstract
One of this year’s most anticipated restaurant and bar openings in London, Roux at Parliament Square, is scheduled for Monday 10th May.
Michelin-starred chef Michel Roux Jr is working in collaboration with Restaurant Associates, the executive dining business which is part of Compass Group UK & Ireland, to create a comfortable and exclusive dining and drinking experience in a landmark setting. Sue Thompson, business director at Restaurant Associates, said: "This is a great opportunity to reinforce our relationship with Michel Roux Jr. The location, in the Georgian, Grade II-listed Royal Institution of Chartered Surveyors (RICS) building on Parliament Square, is exceptional, and whilst we know that there is a very large customer base working and living in the area, there appears to be very little in fine dining to excite them nearby. We're creating a significant destination restaurant and bar that will create a real buzz around Westminster." According to Michel Roux Jr, Dan Cox is an exceptionally talented young chef, who won the Roux Scholarship in 2008: "He has the enthusiasm and knowledge that leads to success. He has an eye for detail and is a perfectionist." Dan says that he feels honoured and excited to head up the kitchen: "You couldn't ask for a better mentor than Michel; his experience of owning and running one of the most successful restaurants in the country, Le Gavroche, will be invaluable to our future success." Front of house will be led by general manager Alain Mara and restaurant manager Johan Brouckaert. "With front of house being run by Roux-trained staff, the diner should always leave Roux at Parliament Square feeling thoroughly spoilt." said Michel Roux Jr. The wine list has been created by John Baum to produce a modern and diverse selection from 250 bins from the new and old worlds.
