Abstract
Plant-based school food organisation ProVeg UK has launched its brand-new recipe book designed especially for school caterers.

All 35 recipes in the booklet are completely plant-based. The recipes are all nutritionally-balanced to meet Government guidelines on school food and have low carbon ratings to help schools reduce their food emissions.

The recipes have been designed by ProVeg UK’s in-house chefs and nutrition experts, and have also been taste-tested by children. The booklet contains 15 main dishes, nine grab & go recipes, five side dishes, and six desserts.

The recipes are inspired by a variety of dishes from around the world, and are the result of the non-profit’s six years of experience working with school caterers. Examples of recipes are Creole-style Jambalaya, Shredded Tofu Tacos with Refried Beans, Indian-style Sausage Rolls and Planet-Friendly Spaghetti Bolognese.

The plant-based recipe book has received praise from school caterers across the country:

  • “It definitely surprised me how easy the recipes were, and how tasty they were!” - school cook, Sandwell Residential
  • “The recipes were very tasty, healthy and very delicious! I especially liked the pasta, curry and tacos, but they’re all tasty!” - school cook, Waltham Forest Catering
  • "Really, really tasty. I loved all the recipes!" - school cook, Manchester City Council

ProVeg’s first recipe book has already been used widely by school caterers across the UK, with thousands of schools using the plant-based recipes on their menus. ProVeg UK’s recipe books are available to download for free from its website
