Prison service starts recruitment drive for chefs

The prison service in England and Wales is looking to present its catering service as an aspirational career for chefs, trainees and college students.

The promotional drive is aimed at qualified chefs, those undergoing training or apprenticeships and also students at catering colleges pondering their first job once they qualify.

Al Crisci, national catering manager technical with HMPPS, said: “Working as part of the award-winning catering team in the prison service will offer you flexibility, a good salary and pension and Civil Service benefits. You will join a professional environment where you have the opportunity to mentor and oversee the work of offenders, helping them to learn new skills.

“It is a great chance to put your catering skills into practice, working with the team to prepare meals for the entire prison. The quality of food has a real impact on prison morale, and you will use your skills to create quality, nutritionally balanced meals every day. You will be trained to cater for all cultural, religious and medical needs.

“Our menus offer five choices per meal over a four-week cycle and we are highly focused on sustainability and using British produce as much as possible. In fact, many of our prisons grow their own food and rear farm animals. By managing offenders who are keen to learn a skill, you will have an impact far beyond the kitchen by helping them earn a qualification for future employment upon release.”

It lists what potential applicants can expect:

  • Plan menus, order ingredients and manage stock rotation.
  • Supervise prisoners to prepare quality, nutritional meals for the entire prison.
  • Support them to learn new skills and gain a qualification.
