Potato recipe guide to encourage healthy eating

Abstract
The Potato Council is developing a new recipe guide to inspire school caterers across Britain to include potatoes in nutritionally-balanced meals that kids will eat and enjoy.
The guide features a mixture of new recipes alongside some familiar dishes. The ten-potato-based recipes have been approved by the British Nutrition Foundation and can be used as part of a day-to-day meal service or as the central focus of a themed 'Potato Day' at their school. Caterers are under increasing pressure to deliver menus that not only fall within the new nutritional standards for school meals but that also satisfy children's taste buds. Research suggests that eight out of ten parents agree that potatoes are important in a healthy diet for children. Heike Boelk, Potato Council marketing executive, commented: "We want to encourage more catering staff to appreciate the key role that potatoes play in the diet of children by providing practical guidance in preparing a range of potato-based meals." Heike goes on to explain why potatoes are ideal for school meals: "Potatoes are an ideal ingredient…because they're naturally low in fat, full of fibre, vitamin C and folate as well as being low in sodium. What's more, they can be sourced locally and children enjoy them." All ten recipes feature a full nutritional analysis along with top tips for healthier versions and information about different varieties of potatoes. The guide complements the Potato Council's 'Guide to holding a Potato Day' which features ideas to help primary schools hold a themed Potato Day, along with the 'Guide to setting up a Jacket Potato Bar', designed specifically for secondary schools.
