Pascal Aussignac named French food ambassador

Pascal Aussignac has won the new award 'Sopexa French Touch Chef 2008' for championing French cuisine outside France via his London restaurants, Club & Cellar Gascon and Le Cercle.
Aussignac was presented with the award at the weekend-long Gastronomades festival in Angouleme, France, now in its thirteenth year, which attracted almost 100,000 visitors. The award, sponsored by Sopexa, recognises the work of French chefs living and working outside France. It focuses on chefs who emphasise French products and dishes in their menus and their integration into the local food culture. The French chef commented on his achievement: "The dynamic food scene in London has allowed me to highlight French cuisine in new and exciting formats. It is wonderful to have the opportunity to bring French cuisine and its values to the UK in a creative way that appeals to Londoners." Marie-Noëlle Guerin, external relations director at Sopexa Paris, said: "Pascal was selected from a long list of chefs worldwide because of the modern way he presents French food. The shared-eating and small dishes formulae that he introduced in London have captured people's imagination. Pascal definitely has a winning recipe in the UK!" Aussignac has previously worked at a number of Michelin-starred establishments including Les Trois Marches, Le Divellec, Carre des Feuillants, Jacques Cagna and Guy Savoy.
