Skill-based training modules will run in partnership with Westminster Kingsway College and Catering Academy, including sessions by Chris Basten, chairman of the Craft Guild of Chefs and chef lecturer in Culinary Arts.
Jonathon Warner of Kingsway College will place new twists on some classic dishes and investigate some more novel flavour combinations.
Whilst Jane Barmer of AgeUK and Jason Jones of Catering Academy will delve into how our senses change as we age and show how menus can be amended to cater for the change.
A number of live cookery demonstrations will also occur throughout the Forum, which allow visitors to share recipes and menus specifically for the needs of service users.
Janie Turner of Thermomix will demonstrate cooking and blending purées with texture modifications and maximum flavour; Preston Walker of Premier Foods will show how to prepare meals for people with dysphagia; Oliver Smith, the NACC Care Cooking 2015 winner will demonstrate his winning dessert of chocolate mousse with beetroot; and Wayne Wright of Bidvest Foodservice will show some snack ideas to boost calorie intake of residents.
The NACC Training and Development Forum will take place on 30 September - 2nd October 2015 at the East Midlands Conference Centre in Nottingham.
