Abstract
Milan (Italy) has been awarded the Guinness World Record for the ‘largest panettone’ – the city’s traditional Christmas cake – weighing a mega 332 kilos and 150cm high.
Prepared by master chocolatier Davide Comaschi and a team of six from the Chocolate Academy Centre, the award-winning Italian sweet bread was displayed and offered to passersby in the city’s shopping centre, Galleria Vittorio Emanuele.
It is believed to have taken ‘hundreds’ of hours to produce and a massive 50,000g of flour!

- 37,800g butter
- 25,200g sugar
- 25,000g dark chocolate
- 22,500g raisins
- 22,500g candied orange
- 22.5l water
- 18,000g egg yolks
- 15,000g cream
- 7,000g of Ruby chocolate (a naturally pink chocolate)
- 5,100g honey
- 2,000g white chocolate
- 810g salt
- 540g natural orange flavour
- 360g natural lemon aroma
- 225g vanilla
