Abstract
Celebrity MasterChef winner Lisa Faulkner has met the challenge to shave 24 calories off a recipe using smart chef swaps as part of a campaign championed by the Government to slash 500m calories every day.

Her recipe for Oven Roast Herb Chicken with Fondant Potatoes simply replaced the butter, which is just one way chefs can make their dishes lighter to help meet the Government's national calorie reduction target.

The recipe follows Unilever Food Solutions’ groundbreaking Ambu-lunch campaign which was launched  outside the Houses of Parliament with Health Secretary Andrew Lansley. He encouraged the industry to make small changes that he said could cumulatively have a big impact on the health of the nation.

The ‘Ambu-lunch’ isl now visiting chefs around the country, driving awareness and providing tips on how to reduce calories.

Lisa Faulkner says: “Since winning Celebrity MasterChef in 2010 I’ve worked in a variety of professional kitchens – and it’s been an eye opening experience.

"I’ve realised just how much influence chefs have over our diets. It’s programmes like MasterChef that have raised the importance and profile of chefs in the UK.

"Whether it’s grabbing a quick bite to eat at lunchtime or treating your family to a meal out, chefs can have a huge influence by adding a healthier twist to our favourite dishes.”
