London hospital puts venison on menu to improve sustainability
Abstract
Guy’s and St Thomas’ (GSTT) Hospital in London has put venison on the menu in a bid to improve its sustainability, it was reported by The Evening Standard.

From 16th May patients at the hospital began receiving the venison meals, which are high in protein, iron and vitamin B as well as being low in fat. Guy’s and St Thomas’ (GSTT) Hospital says the venison is soured from Scotland.

Nedko Rusev, catering chef manager at GSST, said: “We have been working on this project for over a year, and I am so pleased that we are now able to introduce this sustainable, healthier, and delicious red meat to the menu at our hospitals for our patients and staff to enjoy.”

In April 2021, a collaboration between Forestry England, Highland Game and the East Lancashire Hospital Trust (ELHT) let to venison appearing in East Lancashire Hospital Trust menus.
