Abstract
Levy Restaurants, Edinburgh Zoo’s official catering provider, has created a series of seasonal pop-ups at the visitor attraction that is home to the giant pandas Tian Tian and Yang Guang.

The visitor attraction and sporting venue specialist has hand-picked local suppliers and introduced their products to customers in a variety of bespoke outlets across the 82 acre site.

Situated at a high-impact site for ice cream, The Big Cat Kiosk gives visitors a chance to try the home-made flavours of Inverurie, that have been developed and crafted by the ice-creamery Mackie’s of Scotland using produce from its own dairy farm.

Other introductions for the 2013 summer season include a Gourmet Popcorn pop up, the Ultimate Retro Sweet Shop serving family favourites from yesteryear and, with a nod to its zoo environment, The Big Griller.

Levy Restaurants, part of Compass Group, services a high-profile portfolio of client sites including The O2 Arena, Chelsea Football Club and Millennium Stadium.

Edinburgh Zoo's charitable owners, the Royal Zoological Society of Scotland, said its overall income jumped by more than £5m to nearly £15m last year.

And the number of visitors leapt by 51% following the arrival of Tian Tian and Yang Guang in late December 2011.
