The menus at the Aviator restaurant and the Coffee House cafe will be made up entirely of locally sourced ingredients with an empahsis on healthy food, according to company director, David Cavalier.
Cavalier said: "We saw the Aviation restaurant as a blank canvass waiting to be brought to life by some simple but all-important enhancements, including a daily changing menu that offers fresh daily options alongside trusted favourites.
“We're just as excited to bring our high standards to The Coffee House too - think the very best artisan aromas and barista style brilliance. Dishes on the new menu include slow roasted shoulder of Sussex Downs lamb with rosemary and baby onions, vegetable and sweet potato mini hot pot, and Goan fish curry with brown rice and sambals.
The food-to-go offering for staff includes pork and apple pasty, classic mini fish pie, and lemon scented breaded fish goujons.
