Abstract
Soy sauce manufacturer Kikkoman is now accepting entries for its 2018 Kikkoman Masters competition.

Open to professional chefs, entrants must submit recipes for a starter and main course using Kikkoman Naturally Brewed Soy Sauce via https://www.kikkoman.co.uk/kikkoman-pro/kikkoman-masters by 29 June.

Ten finalists will then be selected to take part in a live cook-off on 1 October, where they will produce their dishes in just 90 minutes.

To be in with the chance of winning a seven-day, all expenses paid trip to Japan, chefs should pay close attention to: skills; creative use of soy sauce; taste and flavour; seasonality; balance within the two courses and excessive wastage.

Kikkoman UK general manager, Bing-yu Lee, said: “Last year we had a huge response and the standard of entries was higher than ever.

“The judges didn’t have an easy task selecting the overall winner but Gabriel Rechisan, chef de partie at Gidleigh Park was selected as our worthy winner. He will be heading off to Japan this month (March) to experience its amazing culinary heritage and wonderful flavours.”
