Abstract
The Irish Food Board (Bord Bia) has opened its 2018 Best Dressed Oyster competition, calling on chefs across the UK to enter.

With the deadline closing 3 October, the second annual contest aims to “shine a spotlight on the incredible talent and creative flair in the industry, and showcase the quality credentials of seafood from Ireland.”

Contestants must submit their written recipe to bestdressedoyster@fsc.uk.com by 5pm, 3 October to be considered – judges will then select 10 finalists to go head-to-head for the title on 15 October.

The winner will receive a trip to Ireland to visit some of the ‘fantastic’ seafood producers supplying UK restaurants.

Last year’s winner, Simon Lamont (formerly of Shuck Restaurant), commented: “When it comes to culinary competitions, there are plenty to choose from.

“But this one is leading the way when it comes to celebrating seafood as a speciality, and highlights the specific skills required to prepare truly spectacular fish dishes.

“Taking part in the competition I learnt so much, and winning the award was truly an honour. I’m wishing all this year’s contestants the best of luck!”
