Independent caterers BM signs up ‘top’ vegan chef Dargue
Abstract
Bartlett Mitchell (BM), the independent caterers established in 2000, has announced a new partnership with vegetarian and vegan chef Andrew Dargue of Vanilla Black.

As consultant chef Dargue will provide chef training and set up pop-ups featuring his blend of plant-based cuisine. This collaboration supports the growing demand of vegetarian and vegan cooking.

BM aims to inspire chefs to create meat-free dishes in a sustainable way. The independent caterer employs over 900 team members and caterers for more than 100 locations. In 2014, 2015 and 2016 BM was awarded the Sustainable Caterer of the Year.

Dargue said: “What I love about Bartlett Mitchell is the company is both professional and approachable, and it absolutely doesn’t pay lip-service to vegetarian menus.

“I can’t wait to share my enthusiasm for creating exciting meat-free dishes with BM chefs and further showcasing the world of culinary opportunity that vegetarian and vegan food has to offer.”

Dargue opened Vanilla Black in York in 2004 before relocating the restaurant to London four years later. Its ‘unique’ menu features ‘unusual’ ingredients and flavours.

Pete Redman, chef director at BM, added: “We relish the challenge of working without meat and fish to create delicious dishes for our customers and by collaborating with Andrew, we’re in the perfect position to do just that.”
