Abstract
As the UK’s ‘favourite dip,’ sales of hummus have exceeded £100 million in retail alone. To help foodservice operators tap into the trend and claim a ‘profitable piece of the out-of-home hummus market,’ The Real Deli Co. has launched a guide on premiumising this popular Middle Eastern ingredient.

Available to download for free via its website, ‘Dip into the Potential of Houmous’ features a number of recipes to help businesses add a ‘healthy mark-up.’

These include: salmon with hummus, coriander and pomegranate seeds; hummus with sunblush tomatoes, smoked paprika, chorizo, roasted pepper and basil; and Sriracha Korean hummus with pickled vegetables.

Real Soup Co foodservice manager, David Colwell, explained: “We know what a devoted following hummus has gained in the UK in the past decade or so, so much so that retail sales now outstrip all other dips combined.

“Currently a real in-home favourite, it’s time foodservice operators got their hands on a piece of the action and got wise to the money that can be made.

“With a few simple embellishments, classic hummus can be transformed into something even more special and upsold with incremental breads, crudités or put ‘centre of plate’ as part of a profitable grazing board.

“Serving hummus in the traditional way can be a fantastic money spinner but what about adding it to stuffed, roasted peppers or creating a dish of salmon with houmous, coriander and pomegranate seeds?

“It’s all about inspiring kitchens into profitability and that’s what the Real Deli Co. stands for.”
