Environmental charity Hubbub has launched a campaign encouraging consumers to #EatYourPumpkin as a 'terrifying' 14.5 million pumpkins are expected to be left uneaten this Halloween.
Three in five people will buy at least one pumpkin this year (35 million) and under half of those will go to waste. After carving their pumpkins many people throw away the insides but the Pumpkin Rescue Campaign highlights recipes consumers can use to avoid unnecessary food waste.
The recipes include pumpkin kimchi, Thai pumpkin soup, pumpkin seed pesto, pumpkin passata and pumpkin & coconut cake. According to research around 47% of Brits still don’t know that carving pumpkins you purchase from the supermarket are edible.
Pumpkin Rescue has created 239 local events and workshops attended by a total of 18,600 people, which has led to 17,500 pumpkins being diverted from landfill.
