He and chefs from Lord’s, the Kia Oval, the Ageas Bowl, Emirates Old Trafford, Emirates Durham International Cricket Ground, Bristol County Ground, Edgbaston, Trent Bridge and the SWALEC Stadium were invited to the Waitrose Cookery School in London for the cook off.
Each had to create an inspirational recipe under the watchful eye of 2010 Masterchef winner Dhruv Baker; Gordon McDermott, executive chef at the Waitrose Cookery School and former England cricketer and team selector Angus Fraser.
Butler’s dish of Zesty Mackerel Fillets with Raspberry and Rocket Salad proved so popular that it will now be featured on a recipe card available to shoppers in West Yorkshire Waitrose branches throughout the summer.
In addition, food lovers the world over can vote for his recipe in an online competition, with the chance to win a variety of cricket related prizes.
“It’s been a huge honour to be asked to produce a recipe for Waitrose,” said Stefan, “and it’s great to think that people all across the country can access my recipe and make it themselves at home.
“This is one of my favourite dishes and it really sums up summer for me. The sweet tartness of the berries complements the mackerel perfectly and, combined with the crispness of the lemon and coriander, it’s the perfect summer salad.”
At the stadium Butler caters for thousands of fans of Leeds Rhinos rugby team and the Yorkshire County Cricket Club every year as well as for those enjoying social and corporate hospitality at the stadium.
He works for The Headingley Experience, which manages the catering and events in-house at Headingley. It is a division of UK events company Sodexo Prestige and member of the Prestige Venues & Events collection.
