Abstract
The Hospital Caterers Association (HCA) bi-annual Hot Cookery competition is now open for entries to chefs from the healthcare and NHS sites

Challenged to cook a two-course hospital meal (main and dessert) for four covers in one hour and priced at no more than £2.10 per head, the first meal must be a sustainable chicken dish and the second a fruit-based pudding.

Each portion must also contain less than 10g of added sugar, with meals focusing on reduced saturated fats, sugar and salts whilst being nutritionally suitable for a generic NHS patient.

The event, sponsored by Hobart Cookery Solutions and the Worshipful Company of Cooks, will see up to ten teams of two chefs go head-to-head on 8 March 2018 on the last day of Hotelympia.

For more information and to enter, candidates must contact Phil Shelley, immediate past chair of the HCA at Philip.Shelley@tst.nhs.uk by 30 December.
