Abstract
A new two-day short course 'HACCP for Food Service Establishments, will be held at the University of Brighton's new Culinary Arts Studio at Eastbourne, Sussex on February 4 & 5.
The course will offer practical, advanced training to establishment managers on developing their own Hazard Analysis Critical Control Point based food safety management plan. Leading the course will be Professor Svetlana Rodgers, who has pioneered research in scientific and technological solutions for food preservation and storage.
