The report predicts that chains will follow Pret A Manger’s cue last year of opening specialist veggie stores and that food brands will continue to include vegan as a pillar in new product development.
Vegetarian trends, along with healthy eating, dominate the list with further meat-free predictions highlighted such as an increase in the consumption of the popular Mediterranean snack, lupin, and a rise in ‘green and purple’ pizzas with bases made using beetroot and spinach flour alternatives.
Pizza features twice on the list with a predicted rise in people eating both vegetarian and meat variations of it for breakfast, including the possible introduction of the first ‘full English pizza’.
Also included is a shift from white rice to brown rice in restaurants and sushi dishes and a ‘boom’ in healthy snacks with a reduction in refined sugars and binders.
Other trends listed in the report were an increase in the use of turmeric, a significant rise in Asian fusion cuisine in the home and a continued focus on Brexit.
