Abstract
Country Range Student Chef Challenge has crowned Ayrshire College 2017 champions at the competition final, which took place at this year’s ScotHot hospitality show.

Iona Duncan, Agnieska Dudko and Katarazyna Hospodarewska defeated teams from colleges around the UK, which included City of Liverpool College and Glasgow Clyde College, to win the challenge.

As part of the challenge, run in partnership with Craft Guild of Chefs, teams had to create a three course meal in 90 minutes with the theme ‘healthy gourmet fine dining’.

Chris Basten, Craft Guild of Chef’s head judge, said: “A massive congratulations to Ayrshire College who are definitely deserved winners this year. As we expected from the final there was a fantastic array of skills on shows, from sous vide cooking to more traditional and classic cooking methods.

“Cooking a three-course meal in 1 hour ½ is tough at the best of times but the team showed bags of innovation in their menus and definitely hit the brief with what they served.”

The winning menu featured guinea fowl and crispy black pudding with fennel, orange puree, potato boulangere and port jus for the main course and pistachio, lime and coconut cake with coconut sorbet, passion fruit jelly and compressed mango for dessert.
