Abstract
Sodexo Prestige has partnered with Severn & Wye Smokery restaurant to serve up sustainable seafood at the RHS Chelsea Flower Show this week.
Situated between the Rivers Severn and Wye, the smokery specialises in locally caught salmon, both fresh and smoked, as well as a full range of other smoked fish and smoked poultry. All of these are hand prepared from the best quality fresh fish, salted and smoked over a blend of oak chips and chipped whiskey and calvados barrels to give a unique smoked fish taste.
Highlights from the Severn & Wye menu for the shows include shellfish platters of lobster, langoustine, mussels, queen scallops, Atlantic prawns, squid, brown shrimps, crevettes, cockles, clams and oysters served with a chilled bottle of Laurent-Perrier Brut NV, Finnan smoked haddock chowder served with sourdough bread and Brixham crab with new potatoes and a mixed bean salad.
RHS Chelsea Flower Show is taking place from 25-29 May and the new sustainable seafood restaurant will also be on offer at Hampton Court Palace Flower Show in July. All of the fish served in the restaurant is certified by the Marine Stewardship Council (MSC), non-profit organisation that promotes responsible fishing practices, and has developed an environmental standard for sustainable and well-managed fisheries.

"The Marine Stewardship Council (MSC) accreditation means a lot not only to our suppliers, but to our team of chefs who passionately believe our food should tell a story. Diners will also be able to ask staff about the provenance of their selected fish."
