Brighton's renowned Terre a Terre restaurant is hosting a vegetarian course later this month for two catering students at the City College Brighton and Hove.
It'll be a rapid learning curve for students Kirsty Fair and Vicky Hopewell. They will be mentored by the restaurant's chefs during the Brighton and Hove Food Festival. The training is to prepare them for a Terre à Terre Tribute Night at City College's training restaurant, The Gallery, on 22nd September. The Tribute Night will offer a three-course menu with canapés and wine, showcasing local producers which will include breaky bottom sparkling wine, Duggie's herbs and flowers and high weald dairy. The price of the meal is £40 per head including wine. Leroy Clarke, City College's catering & hospitality curriculum team leader, said: "Brighton has been called the vegetarian capital of the UK so maintaining a high standard of vegetarian cookery is vital to our local catering industry. "Therefore, getting work experience with a restaurant of Terre à Terre's calibre gives City College's aspiring chefs a fantastic opportunity to hone their skills when it comes to this style of food. The Terre à Terre Tribute Night at the College is the ideal way to celebrate the ongoing relationship between the College and the restaurant."
