Abstract
Chef Chris Wheeler of 3 AA Rosettes restaurant, Humphry’s, attended a global livestock industry event (10 April), to emphasise “the importance that UK consumers place on how animals are reared and managed.”

The conference, which took place at the Holiday Inn M4, Jct.4 hotel, saw livestock intelligence company, Allflex, discuss matters including how their products help farmers to rear their animals to the “very highest health and welfare standards.”

Wheeler - UK ambassador for Quality Standard Mark (QSM) Beef and Lamb – was joined in the kitchen by Agriculture and Horticulture Development Board (AHDC) butcher, Martin Eccles, and hotel head chef Paul Green, to demonstrate how different cuts of beef can be prepared and cooked to “enhance” the appearance and eating experience.

Each cut of beef was cooked and presented to the delegates to eat and assign a score for tenderness and taste.

Wheeler said: “The standard of UK-produced beef has improved dramatically in recent years. Systems - such as those supplied by Allflex - give me the confidence that the meat I cook in my restaurants is produced to the highest standards, which translates into a better eating experience for my customers.”
