Previously awarded an MBE in 2005, he is a member of the Craft Guild of Chefs, the Royal Academy of Culinary Arts, and is a Fellow of the Institute of Hospitality.
As a writer he is co-author of Practical Cookery Levels 1, 2 and 3, Theory of Hospitality and Catering, Food and Beverage Management, and Hospitality Supervision. These books have sold over 2m copies and are used in 140 countries.
He has won many awards over the past 40 years, including a Queen’s Anniversary Award for exemplary hospitality education and the British Hospitality Centenary Award for exemplary hospitality education.
In 2004 he was presented with a special award from the Craft Guild of Chefs for Outstanding Recognition and in 2007 he was awarded a Chevalier dans l’ordre du Merite Agricole from the President of France.
He has previously been voted one of the ‘most influential’ people in public sector catering and hospitality, appearing on the very first list compiled in 2008 by Cost Sector Catering (now Public Sector Catering) magazine.
In 2013 he received the Public Sector Lifetime Achievement Award from Cost Sector Catering and was made a recipient of the Foodservice Order of Merit from the Catering Equipment Suppliers Association (CESA).
And in 2015 the Craft Guild of Chefs named him a ‘National Hero’ in recognition of his long years of service promoting the hospitality industry.
In 2016 he was appointed the chair of the International Olympiad and International Council in India.
