Catering expert Cucina gets creative

Catering expert Cucina's top chefs have developed canapés which include MSC certified smoked salmon from sustainable stocks.
Cucina, which serves fresh food to more than 25,000 pupils at 30 contracts up and down the country, recently catered for a sponsors evening at The Harefield Academy in Middlesex, which was combined with a presentation evening for students. The chefs served canapés on blinis with cream cheese and caviar, ham hock terrine with homemade piccalilli sauce, seared tuna with horseradish cream and crispy bacon, finishing with wild strawberry blancmange with shortbread crumb. Steve Quinn, managing director of Cucina, said: "By employing award-winning chefs at Cucina we can excel at any level of catering required from every day restaurant standard school food to events such as this VIP function for some very high profile guests. We also provide nutritious breakfasts, as well as snacks for after school clubs, café bars and even service pods, such as at The Basildon Academy. "At Cucina we think differently to most food service providers, aiming to set new benchmarks for Food Service. As an innovative company, Cucina continuously strives to exceed nutrient based standards and guidelines and also designs menus for individual schools to meet their tastes and diets. Cucina's kitchen is a creative environment, which tempts children to eat as they would in an up-market bistro." Everything is made from scratch in Cucina's kitchens, from homemade breads, fresh soups, homemade yoghurts, sandwiches and salads to fresh pizzas baked in professional pizza ovens. Cucina even makes their own tomato ketchup and mango chutney to accompany the menu.
